2 cups sugar                                                     
2 large eggs
1 cup butter (softened)                                        
4 cups flour
15 oz ricotta cheese                                           
2 TBSP baking powder
2 tsp vanilla                                                       
1 tsp salt
                        
Beat sugar and butter until blended with hand mixer (about 5 minutes).  Beat in ricotta cheese, vanilla, and eggs until well combined.  Reduce speed.  Add flour, baking powder and salt.  Beat until dough forms.  Drop dough onto a cookie sheet.  Bake for 12 minutes at 350 degrees.  Cookies will be slightly brown on the bottom.  When the cookies have cooled frost with vanilla frosting.
