Chocolate Mousse

Perfect dessert for having guests over, but make ahead
Yield: 4-6 servings
Prep time: 1/2 hour
Cook time: 1-3 hours

12 oz chocolate chips
1 1/2 tsp vanilla
pinch of salt
1 1/2 cups whipping cream heated to boiling
6 egg yolks
2 egg whites

Combine chocolate, vanilla and salt in blender fitted with steel knife and mix 30 seconds. Add boiling cream and continue mixing 30 seconds more or until chocolate is completely melted. Add yolks and mix about 5 seconds. Transfer to bowl and allow to cool (very important). Beat egg whites until stiff peaks form. Gently fold into chocolate mixture. Place in serving glasses, cover with plastic wrap and chill. When chilled sufficiently, serve with whipped cream: 2 TBSP sugar for every 1 cup of whipping cream--beat on high until stiff peaks form.
