Big Soft Ginger Cookies

Makes approx. 24 cookies

You’ll eat five of them in 2 minutes!

2 ¼ c. Flour ¾ c. Butter

2 tsp. Ground ginger 1 c. Sugar

1 tsp. Baking soda 1 Egg

¾ tsp. Cinnamon ¼ c. Molasses

½ tsp. Ground cloves 2 Tbsp. White sugar

¼ tsp. Salt

Preheat oven to 350 ̊ F

Mix moist ingredients starting with margarine and sugar until fluffy. Then beat in egg and molasses.

In separate bowl, mix dry ingredients and then add to butter mixture and stir well.

Shape into 1 ½” balls, roll in sugar to coat.

Bake for 8 – 10 minutes, until light brown and still puffed. About 24 cookies.

Note: if dough is too sticky due to humidity, then refrigerate fr about ½ hr prior to shaping into balls.
