Pineapple Dessert

9oz. Cool Whip
1 can crushed pineapple
1 can Eagle Milk
6 T. “Real Lemon Juice”
Combine and pour on Graham Cracker Crust in 13x9” pan.
Chocolate Haupia Pie
7 ounces semi-sweet chocolate
1-1/2 cups heavy whipping cream
1/4 cup sugar
Shaved chocolate, for garnish
Haupia:
1 can coconut milk
1 cup milk
1 cup sugar
1/2 cup cornstarch
1 cup water
Preheat oven & bake crust according to the directions.
Meanwhile, make haupia: Whisk coconut milk, milk and sugar together in a small saucepan. In a separate bowl, dissolve cornstarch in water. Bring coconut milk mixture to a boil, then reduce to a simmer and whisk in cornstarch mixture, whisking until thickened.
Microwave chocolate pieces on high 1 minute; stir to melt completely. Pour half the haupia into a bowl. Mix remaining haupia with melted chocolate and pour over the bottom of the baked pie crust. Layer white haupia over the top. Cool pie at least 1 hour in refrigerator.
Or, if you're like me (always looking for the easy way out)... instead of going through the hassle of melting chocolate & adding it to the haupia, just make some chocolate pudding, pour that into the bottom of the cooked pie crust & then layer the white haupia over the top.
Whip cream with 1/4 cup sugar until still peaks form. Garnish pie with whipped cream and shaved chocolate. Chill another hour. Serves 6 to 8.

Triple Chocolate Pumpkin Cheesecake
Contributed by Rosie Groesbeck
From Crystal Durrant
1 ½ cups crushed Oreos
1 cup milk chocolate chips, melted and cooled
½ stick butter, melted
1 cup canned 100% pure pumpkin
3 bricks cream cheese
1 tsp pumpkin pie spice
1 cup sugar
1 cup semi-sweet chocolate chips, melted and cooled
2 tbsp cornstarch
3 oz bittersweet baking chocolate
3 large eggs
2 tbsp butter
½ cup sour cream
1 tbsp light corn syrup
2 tsp vanilla
Heat oven to 350 degrees. Coat cooking spray on 8 inch spring-form round pan. To make the crust, stir melted butter in crushed Oreos until evenly moistened. Press mixture firmly in bottom of pan. Bake 8-10 minutes, until set. Cool on rack. Wrap outside of pan with foil. Reduce heat of oven to 300 degrees.
To make the filling, beat cream cheese, sugar, and cornstarch in large bowl with mixer on medium speed until smooth. Brat in eggs one at a time, just until blended. Beat in sour cream and vanilla to combine. Divide batter evenly between 3 bowls. Stir melted milk chocolate chips into 1 bowl; pour onto crust in an even layer. Whisk pumpkin and pumpkin spice into another bowl. Carefully spoon over chocolate layer to cover, then gently smooth into an even layer. Don’t let batter run together. Stir semi-sweet chips into remaining batter. Spoon over pumpkin layer.
Set spring-form pan in the middle of a roasting pan. Place roasting pan in oven rack and add boiling water to come ½ way up side of spring-form pan. Bake 1 ½ to 1 ¾ hours until cake is set, but center still jiggles slightly. Turn off oven with the door close; let cake cool in oven for 1 hour. If cake hasn’t pulled away from side of pan, carefully run thin knife around edge. Remove foil, cool cake on rack. Cover, refrigerate at least 4 hours or over night.
To make Chocolate glaze, stir ingredients in small saucepan over low heat until chocolate melts and mix is smooth. Remove from heat, cool slightly. Remove pan sides from spring-form pan, place cake on serving plate. Spread glaze over the top. Refrigerate until glaze sets.

Lemon Blueberry Cheesecake Bars
Contributed by Carly Schutjer
For the base: For the filling:
Butter, for greasing 16 ounces cream cheese, room temperature
2 tablespoons sugar 2 eggs
1/8 teaspoon ground cinnamon 2 lemons, zested and juiced
9 graham crackers About 1/2 cup sugar, eyeball it
1/2 stick unsalted butter, melted 1 1/2 cups fresh blueberries
Powdered sugar, for dusting
Preheat oven to 325 degrees F.
For the base:
Grease the bottom of a 9 by 9-inch baking pan with butter. Then place parchment paper over the top, pressing down at the corners. In a food processor, process the sugar, cinnamon and graham crackers until you have the texture of bread crumbs. Add the melted butter and pulse a couple of times to fully incorporate. Pour into the lined baking pan and gently pat down with the base of a glass. Bake in the oven for 12 minutes until golden. When done set aside to cool.
For the filling:
Add cream cheese, eggs, lemon zest, lemon juice and sugar to the food processor and mix until well combined. It should have a smooth consistency. Pour onto the cooled base and then cover with blueberries. They will sink slightly but should still be half exposed -- as the cake bakes they will sink a little more and break down.
Bake in the oven for 35 minutes or until the center only slightly jiggles. Remove from the oven and cool completely before refrigerating for at least 3 hours. Once set, remove from pan using the parchment lining and slice into 10 rectangular bars. Dust with powdered sugar.
