Peachy Keen Cobbler

1 cup Flour
1 cup Sugar
pinch of Salt
3 tsp. Baking powder
3/4 cup Milk
1 stick butter, melted
1 large can of peaches, drained

Pour peaches in a bowl and add 1 tsp. of each of the following:

Vanilla
Ginger
Cinnamon
Nutmeg

Mix well until all peaches are coated. In a separate bowl, mix dry ingredients with the milk; pour into deep casserole dish (well greased). Pour melted butter on top of the batter within the dish. Without mixing, dump the peaches right in the middle of the dish. DO NOT STIR!

Bake 40-45 minutes in a 400 degree oven. Let it sit for ten minutes while you let the ice cream soften and warm up a jar of caramel topping. Enjoy.

Peach Blueberry Cobbler

1/2 cup butter

1 cup flour

3/4 cup sugar

2 teaspoons baking powder

1/2 cup milk

3 cups fresh sliced peaches

1 cup fresh blueberries

1/2 cup sugar


Melt butter in 2 1/2-quart baking dish (I use a 9x13 pan); set aside. Combine flour, 3/4 cup sugar and baking powder. Add milk and stir until blended. Pour batter over butter in baking dish; do not stir. (it will be thick and a little molding is necessary, "do not stir" scared me, but don't sweat it, it works out!)

Combine peaches, blueberries and 1/2 cup sugar; spoon over batter. Do not stir. Bake at 350 degrees for 45-50 minutes. Serve warm with vanilla ice cream.
